Noritoshi Kanai is well known as the pioneer of sushi in the US. In 1965 he introduced Tokyo-style sushi at Little Tokyo in Los Angeles, CA. As the president of Mutual Trading Co., Inc., Kanai promoted sushi as the best part of Japanese food and allowed it to take root in the life of people in the United States. Sushi came to the center of attention in the food industry and expanded all over the world by his efforts. He supported the Japanese food industry and set himself a definite goal of educating future sushi chefs in Los Angels where was a leading city of authentic and trendy sushi in the United States.
